This Crunchy Thai Chicken Salad has been popular in my house for summer dinners and lunchtime entertaining. My friends in my cooking club have declared this salad one of the best dishes that I have ever made.

My sister asked me to make coleslaw to accompany the menu that she was making for a family meal. That’s the nice thing about gatherings with my family– people help with the cooking and the dishes, which makes hosting much easier. I had never made coleslaw before, but I felt confident because I had my grandma’s famous recipe filed away. When I checked my file box, I found this recipe card (in my sister’s handwriting):
On a recent Fall day while settling into a sweater and boots, I had a craving for a dish that showcases the lovely Fall produce that is filling the markets. I played around with different combinations in my mind and came up with this salad. I daydream about food. It’s a quirk of mine that comes in handy sometimes.
This brussels sprouts salad is my new “go-to” salad. The shaved sprouts have a great crunch and are a welcome change from a salad with regular lettuce. Shaved, raw brussels sprouts are similar to the cabbage in coleslaw rather than like cooked brussels sprouts. I’m enjoying this salad and like the variety it’s adding to my cooking repertoire. Best of all, this salad is ideal for entertaining because it can be made days ahead (with the dressing on the side) and can sit out on a food buffet without getting soggy.
The fruit-nut-cheese salad is my go-to weekday salad. My kids started eating salad when I introduced this recipe to the dinner table. This salad with its trio of ingredients is the gateway to enjoying salads. The fruit and combination of textures make this salad irresistible. What I love is how quick and easy this salad is to make. We never get bored because we rotate the fruit selection by the season.
