This Crunchy Thai Chicken Salad has been popular in my house for summer dinners and lunchtime entertaining. My friends in my cooking club have declared this salad one of the best dishes that I have ever made.

My sister asked me to make coleslaw to accompany the menu that she was making for a family meal. That’s the nice thing about gatherings with my family– people help with the cooking and the dishes, which makes hosting much easier.
