There’s nothing better than a one-pot dinner on a hectic week night. This Honey Mustard Chicken with Apples, Butternut Squash, and Brussels Sprouts can even be prepped ahead. I was feeling like I was in a rut making the same entrees for dinner each week. Adding this dish to our winter dinner lineup has livened up my repertoire. My kids get excited when this dish hits the table.

Butternut Squash, Pomegranate, and Arugula Salad
On a recent Fall day while settling into a sweater and boots, I had a craving for a dish that showcases the lovely Fall produce that is filling the markets. I played around with different combinations in my mind and came up with this salad. I daydream about food. It’s a quirk of mine that comes in handy sometimes.

Pumpkin Pasta
This week I was craving pumpkin pasta, so I turned some pumpkin purée into pasta sauce. I find this dish so comforting and tasty. With just sauce and noodles, this dish has a smooth and creamy texture (without cream). Or add a little pine nuts, bread crumbs, or crisp broccoli for a nice contrast in texture. Either way this dish tastes like Fall in every bite.

Homestyle Apple Cake (shhh, no one will know it’s dairy-free & whole wheat)
I have always wanted to have a great apple cake recipe to make for the Rosh Hashanah holiday and to bake during the Fall when apples are in peak season. For years I’ve tried different recipes, and they’re all pretty good, but not really great. Well, this year I finally hit the apple cake jackpot.
